Berry Streusel Breakfast Muffins
2 cups flour
1 Tbsp baking powder
1/4 cup sugar
3/4 tsp salt
1 cup milk
1/2 cup butter, melted (or canola oil)
1 1/2 tsp vanilla
1 cup thimbleberries
Combine 1/4 cup flour, 1/4 cup brown sugar, 1 tsp. cinnamon and 2 Tbsp cold cubed butter.
Preheat oven to 400 degrees.
Line 12 muffin cups with paper liners.
In a medium bowl, combine flour, baking powder, sugar and salt.
In a large bowl, beat eggs, milk, butter and vanilla for 1 minute on medium. Add flour mixture. Beat just until no streaks of flour remain. Do not overbeat. Stir in berries.
Spoon batter into paper liners. Top muffins with streusel.
Bake 18 to 20 minutes or until muffins spring back when pressed lightly.
